Brazil's coffee production accounts for about a third of all coffee production, making it by far the world's largest producer over the past 150 years. Both arabica and robusta are grown, with arabica clearly dominating with a growing share of 80%.
The Yellow Bourbon variety is distinguished from the others by the bright yellow colour of the ripe coffee cherries. In taste, the coffee is slightly fruitier than other Brazilian varieties, but still distinctly nutty, chocolate and cocoa.
The most common processing method for Brazilian coffees is the dry process, known as unwashed or natural. The Yellow Bourbone variety, however, is processed using the washed method, which aims to remove all the pulp and skin before the beans are dried. The advantage of this processing is that it can best support the quality of the beans. This is why it is used for the processing of most selected coffees. Unlike dry-processed coffees, washed coffees have a purer taste that better brings out the origin and variety of the coffee itself. The main disadvantage is the huge water consumption, which makes it impossible to use in dry areas.
