Finca Fatima is a family farm in Coatepec, Mexico. It is owned by Ernesto Perez and, together with his sister Givetta Perez Orea, they oversee the cultivation and processing on the farm. In 2023, they purchased a new farm, Finca La Perla.
This coffee consists of 3 varieties - Garnica, Marsellesa and Typica. Finca Fatima is located in an area that is threatened by pests and diseases of coffee trees. Their biggest concern is coffee rust, a fungal disease that can devastate an entire plantation. One of the tactics that Ernesto and Givette use is to plant varieties that are resistant to coffee rust, such as Garnica and Marsellesa. With careful cultivation and processing, these trees have enormous potential for an exceptional flavor profile.
